![]() I tried that Cauliflower crust for dinner tonight. I took a head of cauliflower, chopped it up and microwaved it for 10 minutes until it was soft. Then I put it in my blender with 2 eggs, onion powder, mozzarella cheese, 2 minced garlic cloves, pepper & salt. I mixed it up to a mashed potato consistency and then smoothed it out on a pizza pan. I baked it at 450 for 30 minutes and then sprinkled some more mozzarella on top and let that brown for 5 more minutes. In the end I didn't like it! I think I pureed my cauliflower too much. The end result looks better than it was. It was really hard to hold up a piece and it wanted to fall apart to mush. I ended up making myself a mixed green salad and had that instead for dinner. The next time I attempt the cauliflower crust I'm going to bake it a bit longer and try to not blend it so smooth lol. Doesn't that final product look appetizing though?! I wish it would have come out right!

Maybe it was the cheese in the crust that made it fall apart? Or maybe it was the 2 eggs? Mozzarella is kind of a moist cheese so maybe it messed with the consistency somehow. Maybe a bit of corn starch would thicken it a bit? Just some thoughts. I'm kinda obsessed with cooking. >.< I haven't tried it myself but I've seen some recipes & it's interesting! (:
