I had my lemon water first thing and then made myself a breakfast sandwich. I have been making them with a toasted wheat English muffin, 1 slice of sharp cheddar cheese and 1 scrambled egg I cook in the microwave in a coffee cup with a little bit of water for 1 minute. So easy, so fresh, so good and 250 calories per sandwich! I don't think I'll ever go down the road of freezing them again. This way to me is much easier. I am on my 4th cup of green tea and have a ways to go yet on my water jug. I am going to work out after I post this. For lunch I made fresh green beans with a mix of sausauge, onion and portabella mushroom. It was so good! I will definitely be making it again. I know sausage isn't so diet but in moderation I think its ok. I'm to the point now where I trust myself enough to not over-indulge. I just take what I need and then wrap it back up and put it back in the fridge. The mushrooms were great because they soaked up a lot of the sausage flavor so it almost made it seem like I was eating more sausage than I actually had! The whole meal was about 350 calories. I am not sure what I am going to have for dinner yet. I might make boiled cod again with a baked sweet potato. Last night I had that for dinner and it was very good!
